The dish of biriyani originated among the Indian subcontinent’s Muslims. and Mutton Biryani is one of the delicious dish made by the layering of cooked or raw mutton gravy with basmati rice and spices.
This mutton biryani made by me for our special day EID with kabab, salad, raita, and shirkhurma which was too good in taste every one likes, now I am going to share only Mutton Biryani if you want other means kabab please write in comments.
Mutton dum Biryani easy recipe but not fast because it has to cook on low flame in a heavy bottom big pan or heavy bottom cooker.

Mutton Biryani
Ingredients
Marination
- ½ kg Mutton ,lamb
- 1 tbsp red chili powder
- 1 tbsp oil
- 2 tbsp biryani masala garam masala
- 1 tbsp turmeric
- 1 tbsp lemon juice
- 1 tbsp salt
- 1 tbsp Ginger garlic green chilli paste 3G
Mutton biryani gravy
- 2 tbsp oil
- 2 tbsp ghee
- 1 bay leavs
- ½ tbsp shah jeera black cummin seed
- 1 phool, star anise
- 4 green cardamoms choti ilaechi
- 2 small size cinnamon stick dalchini
- 6-7 cloves
- 1 Cup onions sliced thin
- 1 cup coriander and mint leaves
- 2 green chili
- 1 cup yogurt
- 2 tbsp hot milk
- 1 pinch saffron ,red food color
Rice (soaked befor start making gravy)
- 2 cup basmati rice soak minimum 20 mins
- 5 cup water
- 1 bay leaf
- 1 shah jeera
- 1 cinnamon stick
- 2 green cardamoms
- 3 Cloves laung
Instructions
- In bowl do marination add red chili power,biryani masala, yougrt,ginger garlic paste, turmeric,,lemon juice,oil salt. keep for atleast 5 hr or overnight.
- Wash and soak rice for 30 mins, Heat heavy bottom pan or a pressure cooker with oil, add whole spices, onions fry till golden brown, green chilies keep stirring,take out some onion for sprinkl, on low heat add marinated meat, add half coriander,mint make meat soften by coveing or pressure cooker.
- While meat is cooking, boil water in big pot. add whole spices and salt ,then add rice and cook untillrice cooked 85% means not too soft. now drain rice and keep saparate same time mutton also gets cooked.
- soak soffron in mlik. Its layring time. take out greavy and in same pot add half rice first add little fried onion on it and corinder or mint leavs now add all cooked gravy than again add remaing rice sprinkle all same as befor noe pour saffron in center or some 3 4 area or soad orange food color in water and spreadeit on last of rice.
- now cover pot with presure cooker or with lid by using cloth in between to make it cover and heat tawa on high flam and now keep tawa very carefully below pot and cook in low flam fot 12-15 mins.this ia call dum.
- after 15 mins aroamtic mutton biryani is ready serve with fine chopped opnion,tomato and lemon salad or corinder-mint -yougrt -salt raita also.
