Kabab – Shami kabab

Shami Kabab is one the side dish can be adjust with Pav, Roti, Paratha, Dal Rice, Khichdi, Biryani, chai etc but best is to have with laccha paratha. or can be serve with simple green chutney also.

This recipe is invented by Indian Mughal as they are very much food lovers.

Easy Recipe :

This kababs are boiled or sauteed meat (beef or lamb) and chickpeas (chana daal) with whole hot spices (garam masala, black pepper, cinnamon, cloves, bay leaves), whole ginger, whole garlic and some salt to taste until completely tender. Shami kabab are usually made with mutton however they can also be made using chicken

we can make vegetable version of shami kebab made with black chickpeas, gram flour, onions, spices and herbs and rest process is same as this recipe.

Ingredients
  

  • 500 gm minced meat- mutton mutton ,meat or chicken as per choice
  • ½ cup chana dal ( chickpeas)
  • 1 inch cinnamon stick
  • 3 bay leaves
  • 1 tbsp black pepper
  • 1 star anise phool
  • 1 black cardmom
  • 1 tbsp Cumin seeds
  • 4 green cardmoms
  • 1 inch ginger
  • 1 inch Garlic
  • 2 tbsp salt
  • 4 green chillis
  • ½ cup fresh coriander chopped
  • 1 cup oil fry

Instructions
 

  • wash and drain minced meat for half and hour, then heat a cooker on high flam and add meat and all ingredient except fresh coriander cover and cook for 3 vessels and 10 minutes on medium flame
  • once its completely tender and blend it in blender or mixture and then add chopped fresh coriander and mix well by hand then make small ball and press to make flat round shape or your desired shape like heart, square but round is usually makes good look.
  • Heat pan and put 3 tbsp oil and fry 4 or 5 kabab till all fry, now you can serve it with paratha ,biryani or simply kabab with raita or green chutney.
