Khichdi is a rice and dal-based common recipe which is the most comfortable, easy, and quick food for many Indians and are usually made for day-to-day purpose.

Ingredients
  

  • 1 cup rice
  • 1 cup moong dal (lentils)
  • 3 tbsp oil/ghee
  • 2 tbsp salt to taste
  • 3 cup water
  • 1 tbsp  cumin seed
  • 1  bay leaf
  • 1 pinch hing
  • 1 tbsp  ginger garlic paste optional
  • 1 onion (finely chopped)
  • 1  tomato (finely chopped) optional
  • 1 tbsp  chilli powder
  • 2  tbsp  coriander
  • 3 Green cardamoms
  • 1 green chili cut from center only

Instructions
 

  • In a bowl rinse and soak rice, and moong dal for 10 minutes
  • heat oil/ghee in a cooker /instant pot, add cumin seed, bay leaves, and green cardamoms saute for 2 mins after aroma add chopped onion and saute for 2 mins now add ginger garlic paste, turmeric, and salt, green chilli, fry then add soaked rice and da mix well now add tomato, red chili, hing, saute for 2 mins now add water mix well adjusting consistency as required(dry or runny )
  • Cover the lid of pot (change the setting to manual mode) Or cover cooker lid and cook on high flame for 5 minute, when it beeps let it set automatically then off it after 5 mins, and let it cook down don't release it.
  • now serve it with coriander and enjoy dal khichdi with pickle and curd.
