Mutton Rogan Josh is Kashmiri cuisine one pot slow cooked dish amde up with lamb, spices, herbs and yogurt. serve with naan, chapati, plain basmati rice.

Ingredients
  

  • 500 gm Motton with bone
  • ½ tbsp Hing asafoetida
  • ½ cup yogurt
  • tbsp salt
  • 3-4 tbsp ghee oil
  • tbsp kashimiri red chili powder you can make paste with whole chili
  • 1 cup hot water
  • 3-4 cloves
  • 1 inch cinnamon stick
  • 3-4 green cardmoms
  • 1 big black cardmoms
  • 1 tbsp ginger and garlic paste
  • 1 bay leaf
  • ½ garam masala

Instructions
 

  • heat oil or ghee in heavy bottom pot, add bay leaf, green cardmoms,cinnamon, cloves, and black cardamom, after sizzle for 1 min add washed muton and fry for 2-3 min on high flame, keep fo r5 min on medium heat when mutton light brown add hing to it and mix well.
